A Week Of Lunches

Working from home full time, I feel it is important for me to get out at lunch time, but really I enjoy lunch out regardless of where I am working. If all goes well, I plan to take the ferry to Tortola tomorrow. I didnt want to let a week go by without the Veggie Delight at De Coal Pot, so that was the location of today's fantastic lunch...

    What delicious lunching you have had lately- that spiced chickpeas and tofu dish looks so good! I always appreciate creative vegan meals the most. And feta free greek salad is one of my favorites! Must be the oregano dressing or something.
    Dunno that a large tattoo of ms peanut is the way i would express my love of a child, but it's quite clever.

    1. The ziplining itself isnt scary, it is just the idea that the line might break and you will plummet to your death that is scary. Feta-less Greek Salads are my new favorite, thanks to you. What I have been missing all these years!

  2. Ahhhhh what a great zip lining pic!! That is amazing! I can't even imagine how cool that must have been.

    All of your lunches look incredible. I am obsessed with greek salads and that one looks pretty incredible. I definitely have to try the mango and avocado salad at some point because every time I see it here I feel like it looks really refreshing and delicious. Definitely going to be a summer meal! What kind of dressing do they use? A side of sweet potato fries is the perfect complement.

    1. You would probably love zipliining. You are into challenging yourself a lot. I remember when you were hoping to go on Wipeout. The Salad Dressing is so light. It is supposedly a Starfruit Vinaigrette, but I cant detect the particulars of it.

  3. Zip lining!! How fun, that is definitely something on my list of things I need to do! Was it fun, or terrifying, or both? The tofu dish and the mango avocado salad look out of this world!

    1. I am sure there must be ziplines in those Pacific North forests. My exoerience was fun and terrifying, a good balance of both those emotions, but I was happy when it was over and now I never have to do it again.
