Slow Week

There were some good eats this week, but the Miso Salad with Tofu at Lanai was pretty much the highlight ...
yes I ate the whole thing.
The 'Veg'd Out Quesadillas' at Shoreline Bar and Grille were the lowlight of the week. I have noticed that the food at Shoreline is not as good when the chef isnt there. Not sure how he would improve Hummus Quesadillas, but I dont plan to try and find out...
I am constantly checking bags of Croutons in hopes of finding vegan ones. Thought I hit pay dirt with this Reese brand...
but after rereading the ingredients at home, I noticed 'enzymes'. Wasnt gonna throw them out though...
this Salad Bar Salad from Moe's tasted awful for some reason, this has not been the best food week, but the Croutons were good. They will be eaten.
At $5/box, these Heritage brand burgers are the least expensive Veggie Burgers I have seen on the Island (Boca Burgers are outrageously expensive)...
These were tasty enough for the price (an actual Pea was inside, but not gross like Dr. Praeger's), so I guess I will start buying regularly. Should have left this meal in the toaster oven at least five more minutes...

Meals and Mangoes

Some recent meals of note...
my first time adding Tofu to the Mango Avocado Salad at Mafolie. Wasnt as spectacular as I had hoped...
Polenta with Fried Tofu and Stewed Garbanzos for brunch at Shoreline Bar and Grille. Really good, but next time I will take half home, it was a colossal amount of food...
Shoreline is known for the huge Tarpon swimming in front of the restaurant. They are cool, but this visitor also came by while we ate. I was in heaven.
Feta-less Greek Salad at Jen's Island Deli. A surprisingly light and fresh Salad for a place that leans more towards comfort food, just what I needed. (Thanks again, Unknown, for telling me about these).
So tons of Mangoes have been hanging off the trees the past few weeks. We have a couple small Mango Trees in our yard, but none are big enough to fruit. Fortunately, a neighbor has been putting out his extra Mangoes for passers by...
see, he has so many coming down...
At first, I thought he was giving them away cuz they are so small, they are worthless. Turns out, you just need about ten of these little ones cut up to get a nice big meal. When Mangoes are free, cutting them up is much less stressful and I have become rather adept at it. 
A Skink at Phantasea Botanical Gardens. Sadly, these passive reptiles are endangered due to habitat destruction and predators. That is all. Thanks for looking. Bye for now.

Trying New Things

Shoreline Bar and Grill has some new-to-me vegan items on their menu...
Sunday breakfast was the 'Vegan Benny' - Layered White Potatoes, Spinach, Tomato, Avocado, Grilled Onions and Coconut Curry Sauce. I dont know if it was the Onions or Curry Sauce, but the dish was surprisingly sweet. Belongs on the Lunch or Dinner menu IMO...
now their 'Irie Veggie Medley' of Crispy Tofu, Stewed Chickpeas, Sauteed Spinach and Peppers with Rice was absolutely delectable! Huge fan of this dish and so thrilled to find another satisfying vegan meal on the Island....
'Balsamic Soy Roasted Mushrooms' at Sabroso is another great meatless dish. They use big fresh Mushrooms...
at home, still enjoying the carryout Soups. This was Black Bean Soup from Moe's Market. Great batch of Soup this week...
As far as actually making something for myself, that has been limited lately to Gardein Fishless Filets. Hard to believe, but they sort of are like fish (Pasta Salad from Ma's Vegi Deli in the background).,..
Breakfast has become all about PB and Banana! Thank you Sarah and Ingrid for reminding me of this option. Really been enjoying breakfast lately. Lots more to come. Bye for now.

Sedate Sunday

Mandatory taking it easy this weekend. Breakfast this morning was the Tofu Scramble at Shoreline Bar and Grille. Much better than last time, but the side of Avocado was horrific yet again. Learned my lesson not to waste $4 on that when there are fresh Avocados being grown here as I type this...
earlier, the Mr. had enjoyed a shore dive with Coki Dive Club. Below is the Dive Shop Cat, Sadie, whom I met while waiting for him to finish. So sweet and friendly...
I thought this was an adorable little fruit stand on the road to Coki Beach, so I took a pic. Someone inside yelled, "Who say you can take a picture?!" Scared me off...
in the afternoon we went to see a replica of a Spanish sailing vessel that is currently docked in St. Thomas...
it was $10 pp to tour, and lots of folks were paying up...
personally, I didnt think it was worth it (Admiral's quarters below)...
I would have much preferred to tour the yacht next door...
Sabra Hummus with some Mediterranean Style Crisps for dinner...
a locally made Brownie for dessert...
very rich. They did a great job!
some sweet yellow flowers blossoming in the cracks of the road...

A Lot Was Eaten Between Christmas and New Year's

Dang I have been gluttonous the last week....
Tofu Scramble with Hashbrowns at Shoreline Bar & Grille. They have been under new ownership for the past few months and been better for it...
not only is there now a hot vegan breakfast item available on the island on weekends, they have a great view. Not so much of Margaritaville, but the clear water, rainbow and pelicans were all enjoyed right from our seat on the waters edge...
I am on a neverending quest to learn to appreciate Eggplant, hence my ordering a Roasted Eggplant and Pepper Sandwich at Cafe Amalia. The first bites were outstanding, not like Eggplant at all, but towards the end, it got to be too much...
located in Palm Passage, such a beautiful setting for dining...
another great meal was had at The Lanai at Limetree Beach. The Roasted Cauliflower with Siracha was a big enough portion for sharing...
my 'Miso Salad' with Cucumber, Radishes, Tomatoes, Tofu and Tortilla Strips was fresh and crunchy...
