Ma's Vegi Deli

While I am still chowing down on Summer Tomatoes, here are some recent items carried out from Ma's ...a Vegan Sausage Pate for breakfast...
BBQ Tofu with Beets! Green Banana and Cassava (Green Banana and Cassava are two common food items here that I am still getting used to)...
Gluten with Collards and Garlic Noodles...
Tofu and Spinach Pate for another breakfast...
Tofu Sticks with Mac & Cashew Cheese and Steamed Vegetables...Some meals I can separate out the protein, starch and veg before plating...Others are too intermingled...
Zucchini Cake...
Lasagna..
Carrot Cake...
Here is how I reheat it all: a Hamilton Beach 'Toastation' left behind by the previous owners of the house. Works like gangbusters.
I never had the counter space for a toaster oven before. I have really been missing out,

  1. Toaster ovens are especially glorious in the summer!! It makes life slightly better when you don't have to turn on a full oven when it's pushing 95!

    Everything looks so amazing!!! I'm loving the look of that zucchini cake, spinach and tofu pie thing, the gluten with collards and the tofu sticks with Mac n cheese. Check it all looks really great! Are y poo u enjoying the new things you've been trying like the cassava? It must be fun to get to try new local stuff!

    I have noted the melting issue ;) I'll save the baked treats for cooler weather!

    1. I am still learning to appreciate things like Cassava. I am doing better on Beets. Sometimes, I have no clue what i am eating.

  2. Ooh the zucchini cake looks awesome.
    Nice to see some beets on the plate. Are you acquiring a taste, or eating them because they're unavoidable? Do they taste any different?
    I like that the seitan is just called gluten down there, haha. Tellin it like it is.
    Yr kitchen is beautiful! So bright and blue!

    1. The Beets are not as objectionable as if I tried making them myself. I do like the kitchen. I am not a fan of those hard granite modern kitchens. Will be glad when that style passes.

  3. Those patties look so good and stuffed full of stuff! I'm impressed you ate actual chunks of beets. Casava is one root veg i'm not so fond of. Yuca is almost the same yet somehow more creamy texture. Nice that they have a vegan lasagna and so many creative tofu dishes. The toaster oven is a great score, never had one myself but i love the idea of it....
    Your kitchen is great! All that natural light and adorable helpers :)

    The worst of the hot nasty has left us for now, whew. I had to citibike thru the obama traffic jam in midtown the other day for an appointment, kinda exciting when the cops started yelling at me for trying to bike down a closed off street...! At the time i had no idea why it was such a mess.
    Frozen grapes and green symphony smoothies lately here.

    1. I ate the Beets, but cant say that I savored them so to speak. So far I have only seen people buying Yuca in the stores, but I havent come across it on menus. The thing about the toaster oven is that is an old Hamilton Beach, but heats things up in minutes. I told the previous owners to take the microwave, which thankfully they did. So the cop thought you might be a threat to the prez;-) I thought he was in Kenya, but he must have come back. No Bloody Mary Brunchs this weekend?

  4. Your kitchen is so beautiful! I love the floor. It;s always nice to have kitchen help too. The pates look delicious! It;s great that you have so many vegan options. It looks like your slowly finding some vegan desserts.

    1. It is great to have so many options. I guess the locals arent into the rich chocolatey desserts that we are accustomed to. I am not missing them too much surprisingly.

  5. Ma's carries some delicious looking stuff! Your new Loving Hut and such! Not to mention, the desserts too. I have always wanted a toaster oven, but just don't have the counter space for it. Beautiful kitchen and critters, supervising it all!

  6. I've melted so many things leaving them on top of the toaster oven, don't use it as a shelf! Love plantain and cassava. Is that steam coming out of the carrot cake? The color of your kitchen floor is rad!
